I started watching your videos and found them really helpful. I am planning to upgrade my PC and I am confused trying to choose the best processor for me
I am an digital artist . I work with high resolution photoshop and Illustrator files. Also play games a lot. Right now I have an Intel i7-6800K.
With the budget I have these are the processors I can go for
I7 - 11700
I7 - 11700k
I9 - 10900
I7 - 10700
Ryzen - 9 3900xt
Ryzen - 9 3900x
also if I go with ryzen is it possible to change it to a 5000 series later with the same mother board
I am planning to get 3060 ti and 32GB ram with this. If you can guide me to pick a good processor It would be really helpful.

Adobe Photoshop & Illustrator relies mainly on higher single core cpu performance. Therefore cpu with more cores(higher multicore performance) is not usefull for your usage.
From your list the best single core performance cpu is the i9 11900 but since it's bit too expensive I would recommend either a i7 11700K or Ryzen 5800X according to your preference. AMD 5800x is the better cpu, check benchmark charts & videos below.
Since gaming performance is also related to single core cpu performance you can have a really good gaming & work pc using either of those cpus.
Ryzen 3000-series has great multicore performance but lacks a bit in single core & gaming performance.
